Iekei ramen, the Yokohama style, is the specialty here. Broth is simmered more than twelve hours from pork bones, chicken bones and dried mackerel, with kelp soaked overnight for umami, and the noodles come from Kobayashi, a California noodle maker. The menu includes tonkotsu, spicy tonkotsu and tantan men, with chashu smoked using traditional methods. The Daly City shop also states a commitment to reducing its environmental impact.
