Inner Mongolian style hot pot anchors the menu at Happy Lamb, where the bone marrow broth is made through a six-step process over six hours using more than 10 ingredients sourced from their places of origin. The restaurant says the broth is flavorful enough that no dipping sauce is needed, though an unlimited sauce bar is available. Lamb comes from Inner Mongolia as well as the UK, Scotland, New Zealand, Ireland, and Australia, and hot plates are served alongside the hot pot.
