Founded by Hiro and Nori, who together bring more than 20 years of culinary experience, HiroNori Craft Ramen serves tonkotsu, shoyu, and vegan bowls at its San Mateo shop. The tonkotsu broth takes 24 hours to prepare, the shoyu uses soy sauce barreled for two years at a Japanese factory more than 300 years old, and the vegan version is built on five kinds of miso imported from Japan. Noodles are made with premium flour imported from Japan, with wheat grown by partner farms in Calgary, Canada.
