Ramen Nagi makes personal preference part of the ramen order at its Bryant Street location in Palo Alto. Diners can adjust flavor strength, richness, garlic, noodle thickness, and firmness, then choose toppings to finish the bowl. We like that level of control, especially when one person's ideal ramen is very different from another's. The signature bowls also have distinct identities. Original King starts with tonkotsu, Red King adds chili and garlic, and Black King combines darkened garlic with calamari ink. Green King brings basil, olive oil, and Parmesan into the pork broth, while Veggie King uses mushroom and cauliflower with potato chashu. Karaage chicken, gyoza, and chashu rice provide sides. Ramen Nagi's appeal is the ability to begin with a clearly defined house bowl and then make its details feel your own.
