Tamarine opened in Palo Alto in 2002 under executive chef and proprietor Tammy Huynh, whose mother ran Vung Tau, one of the region's pioneering Vietnamese restaurants. The modern Vietnamese menu includes shrimp and pork spring rolls, green papaya salad with dried sesame beef, Dungeness crab wok-fired with glass noodles, and garlic noodles tossed with butter and Parmesan. An in-house gallery shows work by emerging artists from regions throughout Vietnam. Forbes named the restaurant one of its Top 10 Power Dining Spots.
