Ranzan serves kaiseki ryori, which it calls the pinnacle of washoku, the Japanese cuisine registered by UNESCO as an intangible cultural heritage in 2013. Dinner runs through named kaiseki courses called Katsura, Takao, Kibune, and Ohara, plus a sushi kaiseki, while lunch brings the Hana kaiseki, shokado bento, and donburi gozen. Three private rooms named Matsu, Take, and Kiri seat small parties, and takeout bento include saba sushi, wagyu steak, crab chirashi sushi, and hitsumabushi with eel and conger eel.
