Pork bone broth is the foundation at Totoro Ramen in San Mateo, cooked fresh daily for 18 to 20 hours, with roughly ten hours over strong heat followed by ten hours of simmering. Bowls include black garlic pork, tonkotsu, miso, shoyu, curry, the spicy chili miso niku ramen, and the soup-less maje ramen, with veggie options available. Founder Hee Choi took the name from the animated film character. Ordering runs through iPad self-service in the dining room, and online ordering is available.
